Will moving hosts cause downtime?
It should not. We stage a full copy on the new host and test it before anything changes, lower the DNS time-to-live in advance so the cutover propagates in minutes, and keep the old server running until the new one is confirmed serving traffic. The part that goes wrong in most migrations is not the website, it is email and DNS records, so those are checked explicitly afterwards.
